Fried Tagliatelle
In Monterubbiano, fried tagliatella is a true institution. It is a traditional recipe, born several years ago from the inventiveness of a Monterubbianese cook and since then a symbol of the area.
In fact, the recipe dates back to around 1973. In order to surprise all the guests who would attend her son’s wedding, the cook, Santina of Pazzi Restaurant, was looking for a first course different from all the others. Santina, with the help of a friend of hers, began to work on this truly ingenious project.
Tagliatelle were chosen as the basic product, given the importance of this type of fresh egg pasta in the gastronomic tradition of the Marche region, and the first trials began. They needed to choose the right ingredients and perfectly balance them, get the right consistency of the dough, the right shape, the perfect cooking point and the most suitable seasoning. After several attempts, they got what seemed to be a well-made dish, very elaborate, rich and above all delicious.
The experiment succeeded so well that the dish became the specialty of the Pazzi Restaurant and the Sports Club and Pro Loco of Monterubbiano decided to dedicate a festival to the recipe, namely the “Festival of Fried Tagliatelle” usually held in the first half of August.
Ecomuseum of the Aso Valley
The valley of the Aso River is a vast territory that opens up in the center of the Piceno region and has almost entirely preserved its original unspoiled appearance. A multitude of mountain ranges rises as far as the eye can see from the Adriatic Sea to the Sibillini Mountains, in a succession of hills and small, well-preserved fortified villages of Piceno, Roman and medieval origin.
Renowned since ancient times for its excellent agricultural production (fruit, vegetables, arable crops), the Aso valley has been able, on the one hand, to preserve its food and wine traditions, undertaking processes of promotion and certification of typical quality products (DOCG and IGT wines, Maccheroncini di Campofilone IGP, Ciauscolo IGP, EVO oil, cooked wine, cheeses, cured meats, meats, etc.) and on the other to invest in the protection of the territory with initiatives linked to its conservation and sustainability.
Here, between the provinces of Ascoli Piceno and Fermo, the experimental project of the Ecomuseum of the Aso Valley got underway in 2011. A public-private entity aimed at promoting the socio-economic development of the territory, through the knowledge and networking of local cultural dynamics, the creation of synergies with the artisanal tourism sector and attention to the environment.
The consolidation of collaborations and the success of the many initiatives, implemented according to the logic of the ecomuseum or territorial museum, led in 2016 to the establishment of the Association “Ecomuseum of the Aso Valley and its identities” identifying its headquarters in the Morelli/Astorri building at Campofilone.
The validity of the ecomuseum project has seen a growing involvement of businesses, associations, private individuals, schools, universities and especially Local Authorities from the middle and lower valley.
Currently, the following municipalities have joined the association: Altidona, Campofilone, Carassai, Moresco, Montalto delle Marche, Montefiore dell’Aso, Monte Rinaldo, Monterubbiano, Monte Vidon Combatte, Ortezzano, Pedaso and Petritoli.
Each of these municipalities have peculiarities that make them unique and worth a visit. Of these 12 municipalities, three are among the Most Beautiful Villages in Italy, two Blue Flags, one Orange Flag, one Green Flag and there is also an Organic District and an Agri-Environmental Area Agreement.
